Emulsifier Lecithin Liquid

N° 838

Usage

Dilution

Between 0.5% - 10%

Top Tip

Recommended PH - 4-8.

Soluble in oil.

For water in oil emulsions, add lecithin in the oil phase and heat to around 70°C and gently stirred until fully dissolved. Heat the water phase to the same temperature (in a separate beaker) and then very slowly trickle the water phase into the oil/lecithin phase and homogenise for around 5 minutes. Once cooled add a preservative and let to stand for 24 hours to get the final consistency.

Lecithin can be tricky to work with and can sometimes curdle or can separate when formulating. It is one of the hardest natural emulsifiers to work with and can take some practise to get it right.
